Rosie Kim, the Luxury Beverage Manager at Ritz Carlton Melbourne, has ingeniously crafted an inviting non-alcoholic beverage menu tailored to a refined palate, particularly during a period that was personal and transformative—her pregnancy. Kim, with her profound expertise and personal journey into motherhood, recognized the growing demand among hotel guests for sophisticated drink options that exclude alcohol.
Kim discovered the art of substituting traditional spirits with non-alcoholic distillates, infusions, and aromatics that mimic the complexity and depth of alcoholic drinks. This exploration was not only about adapting to her life changes but also about providing an inclusive drinking experience for guests who prefer or require non-alcoholic options.
“During my pregnancy, I discovered that my beverage options were quite limited and was eager to discover new ways to enjoy myself. Developing the beverage selection at The Ritz-Carlton, Melbourne, I incorporated a selection of non-alcoholic wines and non-alcoholic beer so all every guest could enjoy an elevated dining experience. The perfect pairing shouldn’t be limited to alcohol, and I have loved collaborating with Atria’s Head Bartender, JC and Executive Chef, Michael Greenlaw to incorporate native Australian ingredients into unique non-alcoholic cocktails,” states Kim.

As a sommelier of both wine and tea, Kim is deeply passionate about all beverages both alcoholic and non-alcoholic. She takes pride in curating a diverse selection of drinks and every beverage is important in creating a luxury experience, including water and tea.
Her fascination with non-alcoholic beverages began when she was the Assistant Head Sommelier at Ten Minutes by Tractor. During that time, she discovered inventive, non-alcoholic cocktails that were created with a chef's precision. Her Bar Manager carefully chose ingredients - such as rhubarb, strawberry gum, and Brunswick Aces, a non-alcoholic gin from Melbourne, to create delightful combinations with balanced flavour. “Being part of this project was truly fulfilling, and I saw new opportunities to create memorable experiences for guests who don’t drink alcohol, " says Kim. “Earlier this year at Atria, we partnered with NON for Dry July and their product is truly impressive - utilizing Kombu for an umami salty savory taste, Sansho pepper to mimic the alcoholic sensation on the palate, caramelized pear to enhance mid-palate richness, and more,” states Kim.
Collaborating with The Ritz-Carlton’s bartenders and chefs, gives her an opportunity to explore and create new flavors inspired by the seasons.
“Non-alcoholic beverages can be playful and creative, and I am eager to continue pushing the boundaries of taste and creativity,” says Kim.

Kim’s dedication to elevating the non-alcoholic dining experience extends beyond just flavor. She considers the aesthetic and sensory aspects of drink-making, ensuring that each beverage is visually appealing and aromatically enticing.
